Wusthof Cleaver 16cm/20cm

Traditional European bone cleaver with 16cm/20cm blade favoured by professional chefs for all those heavy duty tasks.

Wusthof blades are made of high carbon steel and feature Wusthof’s Precision Edge Technology that stays sharp up to 30% longer. Each blade has a full tang that is triple-riveted to the contoured polymer handle. This not only gives each knife incredible balance and durability, it increases the hygienic level of knives and prevents food from becoming stuck in any hidden pockets or gaps.

Wusthof’s range has a traditional 3-rivet design and is made from a single piece of steel – from the tip of the blade to the very end of the handle. There are 38 major manufacturing steps, from forging to tempering, from 2 stages of hand grinding to the final attachment of the handles.

    I love my Wusthof. It is a really good Cleaver. I did an online research before deciding to buy it. Comparing with Zwilling J.A. Henckels, Wusthof’s blades are slightly harder. People mentioned Zwilling J.A. Henckels making good knifes, but they spent a lot of money on marketing. The quality of the knifes is just slightly above average.

    However, Wusthof is a bit better than Zwilling J.A. Henckels. The blades are longer-lasting sharpness. But it requires a good maintenance. Some people complained that the chances of the edge chipping is higher than others because of the hardness. Luckily, I haven’t got this problem yet. When you decide to buy which knife, you need to think about this issue even if coming with life warranty.

    Overall, I am happy for this knife. It is heavy but good for chopping bones. Expensive but worth it! If you want a knife for slicing, please don’t buy it. Slicing was terrible unless you are proficient in knife skills. The blade is too thick.
